(Not) Sun Dried Tomato Sauce

It’s day 5 of Alberta Co-op Basics Week, and I’m sharing a recipe from one of my favorite cooking websites, Budget Bytes. It’s full of yummy, healthy recipes that won’t break the bank. This one is an amazing tomato sauce that can be used just about anywhere: on pasta or pizza, spread in sandwiches, brushed on chicken breasts before baking, as a dip, eaten by the spoonful… you get the picture. My fridge is never without a jar!

Instructions
  1. Add the olive oil, garlic, basil, oregano, thyme, rosemary, crushed red pepper, salt, and some freshly cracked pepper to a small skillet. Stir and heat the mixture over low heat for about 3 minutes. It’s okay if it sizzles slightly, but you don’t want it to get hot enough that the herbs burn.
  2. Add the tomato paste and honey. Allow it to heat through as you stir. It will not form a smooth sauce. Continue to stir and heat over low for about 5 minutes or until you notice the tomato paste has darkened slightly. Either use immediately or refrigerate until ready to use!
Recipe Notes
  • 1.5 tsp Italian Seasoning can be used in place of oregano, basil, thyme and rosemary.
  • Play around with seasonings to make your own custom sauce.
  • Mix the minced garlic with a little water in a small sauce dish before adding to the pan. This helps prevent burning.
  • Or replace the minced garlic with a clove of Roasted.
  • Despite the name, this sauce is lovely with a few chopped sun dried tomatoes mixed in.
